How Does the Freeze-Drying Process Work?

Step 1: Deep Freezing (Approximately 10 to 12 Hours):We begin by rapidly freezing high-quality candies and ice cream to temperatures between -30°F and -50°F. This preserves their structure and locks in flavors.

Step 2: Primary Drying (Sublimation) (Approximately 11 to 14 Hours):The frozen candies are placed in a vacuum chamber. Under extremely low pressure, we gently start to apply heat, causing the ice to vaporize without melting, completing a process called sublimation. This removes about 95% of the moisture.

Step 3: Secondary Drying (Desorption) (Approximately 6 to 8 Hours):To eliminate any residual moisture, we slightly increase the temperature, ensuring your treats are perfectly crisp and shelf-stable.

How Should I Store My Freeze-Dried Candy?

To maintain freshness and crunchiness, store your freeze-dried candy in a cool, dry place away from direct sunlight. Keeping it in an airtight container or its original packaging is recommended.

How Long Does Freeze-Dried Candy Last?

When stored properly, Freeze-dried food can last 25 to 30 years if stored in ideal conditions.

However, it's so delicious that it rarely lasts that long!
